I have a confession to make. I’m not fond of Rice Krispy Treats. Well, all Rice Krispy Treats except THESE…
I don’t like sweets that don’t involve chocolate and /or peanut butter. Forget Twizzlers, Lollipops, Nerds, etc. Now, don’t feel bad for me- I more than make up for this with cakes and cookies. I have quite the sweet tooth 🙁
Now, if you’re like me, this recipe will totally change your opinion of Rice Krispy Treats. My sister Cindy first made these Scotcheroos years ago. I reluctantly tried one and was hooked!!
For St. Patrick’s Day I tweaked the recipe a little because you’ve got to have some green in your recipe, right?
I foolishly didn’t plan ahead for my Valentine’s Day Candy Wreath, so I found myself sorting M & M’s a couple of days before Valentine’s Day to separate out the red M & M’s. Well….Bonus! While I was at it, I separated all the colors, so I was ahead of the game with my green M & M’s.
This is a simple and quick recipe sure to delight young’uns and adults alike. I have listed the original recipe and then added the changes I made to make this recipe St. Patty’s Day ready!
1 C. Sugar 6 C. Rice Krispies
1 C. Light Corn Syrup 1 C. Semi-Sweet Chocolate Bits
1 C. Peanut Butter 1 C. Butterscotch Bits
Combine sugar and syrup in a pan. Cook over moderate heat until bubbly. Remove from heat and stir in peanut butter, mix well. Add rice krispies, mix well. Press into buttered 13 X 9 pan. Melt chocolate and butterscotch in double boiler. When melted, spread over rice krispies. Cool and cut into bars.
For St. Patrick’s Day, I eliminated the Butterscotch bits and instead used 2 cups of Semi-sweet chocolate morsels. I added 1 cup of green M & M’s to the rice krispie mixture and then sprinkled green bits over the chocolate topping.
